Classic Creamy Rice Pudding

Ingredients:

  • ¾ cup uncooked white rice
  • 2 cups water
  • 4 cups whole milk
  • ⅓ cup granulated sugar
  • ¼ tsp salt
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (plus extra for garnish)
  • ¼ cup raisins (optional)
  • 1 tbsp butter

Instructions:

  1. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat, cover, and simmer for 15–18 minutes, or until the water is absorbed.
  2. Stir in the milk, sugar, and salt. Cook over medium-low heat, stirring frequently, for 25–30 minutes until the mixture becomes thick and creamy.
  3. In a small bowl, whisk the eggs. Slowly add about ½ cup of the hot rice mixture to the eggs while whisking continuously to temper them.
  4. Gradually pour the egg mixture back into the saucepan, stirring constantly. Cook for 2–3 minutes, until slightly thickened. Do not let it boil.
  5. Remove from the heat and stir in the vanilla extract, cinnamon, butter, and raisins (if using).
  6. Serve warm, or chill for a few hours for a cold dessert. Sprinkle with extra cinnamon before serving if desired.
