Old-Fashioned Blackberry Cobbler
Ingredients
- 4 cups fresh or frozen blackberries
- 1 cup granulated sugar (plus 2 tablespoons for topping)
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk
- ½ cup (1 stick / 113 g) unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similar-sized baking pan.
- In a bowl, combine the blackberries, ½ cup of the sugar, and the lemon juice. Stir gently and set aside for about 10 minutes.
- In another bowl, whisk together the flour, baking powder, salt, and the remaining ½ cup sugar.
- Stir in the milk, melted butter, and vanilla extract until a smooth batter forms.
- Pour the batter into the prepared baking dish.
- Spoon the blackberry mixture evenly over the batter. Do not stir—the batter will rise around the fruit while baking.
- Sprinkle the remaining 2 tablespoons of sugar over the top.
- Bake for 45–55 minutes, or until the top is golden brown and a toothpick inserted into the cake portion comes out clean.
- Let the cobbler cool for 10–15 minutes before serving.
