  • 1 cup zucchini flesh (scooped from the centers and chopped)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese or ricotta cheese
  • 2 tablespoons chopped fresh parsley

For the crispy gratin topping:

  • 3/4 cup breadcrumbs (panko works best)
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the zucchini

Preheat your oven to 400°F (200°C).
Wash the zucchini and cut them in half lengthwise. Using a spoon, gently scoop out the center flesh, leaving a small border around the edges so the zucchini keeps its shape. Set the scooped flesh aside and chop it finely.

2. Make the filling

Heat the olive oil and butter in a skillet over medium heat. Add the chopped onion and cook for about 2–3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the chopped zucchini flesh, Italian seasoning, salt, pepper, and paprika. Cook for 3–4 minutes, stirring occasionally, until the mixture softens and most of the moisture cooks off.

Remove the skillet from the heat and let it cool slightly. Stir in the cream cheese (or ricotta), mozzarella, Parmesan, and parsley. Mix until everything is well combined and creamy.

3. Fill the zucchini boats

Arrange the hollowed zucchini halves in a greased baking dish or on a parchment-lined baking tray. Spoon the cheesy garlic filling evenly into each zucchini boat, pressing it down gently so it stays in place.

4. Make the crispy topping

In a small bowl, combine the breadcrumbs, Parmesan cheese, melted butter, olive oil, garlic powder, oregano, and black pepper. Mix until the breadcrumbs are lightly coated and crumbly.

Sprinkle the topping generously over each stuffed zucchini boat.

5. Bake

Bake for 20–25 minutes, or until the zucchini is tender and the topping is golden brown and crispy. If you want an extra golden top, broil for 1–2 minutes at the end, watching carefully so it doesn’t burn.

6. Serve

Remove from the oven and let the zucchini rest for 5 minutes before serving. Garnish with extra parsley and a little more Parmesan if desired.
