Ingredients
- 1 lb (450g) ground beef
- 1 packet taco seasoning
- ⅔ cup water
- 6 medium flour tortillas
- 1½ cups shredded cheddar cheese
- ½ cup diced tomatoes
- ¼ cup diced red onion
- ¼ cup sliced black olives (optional)
- ¼ cup sour cream
- Chopped lettuce for garnish
- Cooking spray
Instructions
- Preheat oven to 375°F (190°C).
- Spray a muffin tin with cooking spray.
- Cut each tortilla into circles large enough to fit into the muffin cups.
- Press the tortilla pieces into the muffin tin to form cups.
- Bake for 8–10 minutes until lightly golden.
- Meanwhile, brown the ground beef in a skillet over medium heat and drain excess grease.
- Add taco seasoning and water. Simmer for 5 minutes.
- Spoon the seasoned beef into each tortilla cup.
- Top with shredded cheddar cheese.
- Return to the oven for 5 minutes, or until the cheese is melted.
- Remove from the oven and let cool slightly.
- Top with tomatoes, onion, lettuce, olives, and a dollop of sour cream.
