Ingredients

  • 4 cups diced potatoes (about 5–6 medium potatoes)
  • 2 cups cooked ham, diced
  • 1 small onion, finely chopped
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon salt (optional, depending on the saltiness of the ham)
  • 2 tablespoons butter, cut into small pieces
  • Fresh parsley for garnish (optional)

Instructions

  1. Lightly grease the inside of your slow cooker with cooking spray or butter.
  2. In a large bowl, combine the cream of chicken soup, sour cream, garlic powder, black pepper, paprika, and salt. Mix until smooth.
  3. Add the diced potatoes, ham, onion, and half of the shredded cheese to the bowl. Stir until everything is evenly coated.
  4. Transfer the mixture to the slow cooker and spread it evenly.
  5. Dot the top with the butter pieces.
  6. Cover and cook:
    • On LOW for 6–7 hours, or
    • On HIGH for 3–4 hours,

    until the potatoes are tender.

  7. During the last 20 minutes of cooking, sprinkle the remaining cheddar cheese over the top.
  8. Cover again and cook until the cheese is melted.
  9. Garnish with fresh parsley if desired and serve hot.

  • Add ½ cup diced bell peppers for extra flavor and color.
  • Substitute cream of mushroom soup for a richer taste.
  • For a crispy top, transfer the finished casserole to a baking dish and broil for 2–3 minutes.
