Ingredients
- 3 large eggs
- 2 egg yolks
- 120 g (½ cup + 2 tbsp) granulated sugar
- Zest of 2 lemons
- 125 ml (½ cup) fresh lemon juice
- 2 tablespoons butter
- 500 ml (2 cups) heavy cream
Instructions
- In a large bowl, whisk together the 3 eggs, 2 egg yolks, and sugar until smooth and well combined.
- Add the lemon zest and pour in the fresh lemon juice. Mix until fully incorporated.
- Transfer the mixture to a saucepan and cook over low heat, stirring constantly until it thickens slightly. Do not allow it to boil.
- Remove from the heat and stir in the butter until completely melted and incorporated.
- Let the lemon mixture cool to room temperature.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the cooled lemon mixture into the whipped cream until smooth and creamy.
- Divide the mixture among serving glasses or dessert cups.
- Refrigerate for at least 4 hours, or until fully set and chilled.
