Instructions

  1. Heat the olive oil or butter in a large soup pot over medium heat.
  2. Add the sliced onions and cook for 8–10 minutes, stirring occasionally, until softened and lightly golden.
  3. Stir in the garlic, carrots, and celery. Cook for 2 minutes.
  4. Add the chopped cabbage and cook for another 5 minutes until it begins to soften.
  5. Pour in the broth and add the thyme, salt, pepper, and bay leaf.
  6. Bring the soup to a boil.
  7. Reduce the heat and simmer uncovered for 30–40 minutes, or until the vegetables are tender.
  8. Remove the bay leaf and stir in the lemon juice if using.
  9. Taste and adjust seasonings as needed.
