 Pineapple Fermented in Honey (Honey-Fermented Pineapple)

A sweet, tangy, and naturally fermented treat that’s delicious on yogurt, desserts, pancakes, or eaten straight from the jar!

Ingredients

  • 1 fresh pineapple, peeled and cut into small chunks
  • 1 cup raw honey (or enough to fully cover the pineapple)
  • 1 clean glass jar with a lid

Instructions

  1. Place the pineapple chunks into a clean glass jar, filling it about ¾ full.
  2. Pour the honey over the pineapple until all pieces are completely covered.
  3. Stir gently to remove trapped air bubbles.
  4. Loosely close the lid (do not seal tightly) to allow fermentation gases to escape.
  5. Leave the jar at room temperature for 3–7 days.
  6. Open the lid once or twice daily to “burp” the jar and release pressure.
  7. Stir the mixture daily. You’ll notice bubbles forming as fermentation begins.
  8. Once the pineapple reaches your desired level of sweetness and tanginess, transfer the jar to the refrigerator.

Notes

  • Fermentation time depends on room temperature; warmer temperatures ferment faster.
  • The honey will become thinner as it draws moisture from the pineapple.
  • Store in the refrigerator for up to several months.
