These slow cooker country potatoes are buttery, cheesy, and packed with flavor. Cooking them in foil packets keeps them tender and makes cleanup easy—perfect for family dinners, cookouts, or busy weeknights.

 Ingredients

  • 6 medium potatoes, diced into bite-sized pieces
  • 1 medium onion, finely chopped
  • 3 tbsp butter, melted
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (or to taste)
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley (optional)

 Instructions

  1. Wash and dice the potatoes into evenly sized pieces.
  2. In a large bowl, combine the potatoes, onion, melted butter, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss well to coat.
  3. Divide the mixture among 3–4 large sheets of heavy-duty aluminum foil.
  4. Fold and seal each foil packet tightly.
  5. Place the packets in the slow cooker, stacking if necessary.
  6. Cover and cook on:
    • Low: 5–6 hours
    • High: 3–4 hours
  7. Carefully open the packets and sprinkle the potatoes with shredded cheddar cheese.
  8. Cover again for 10–15 minutes until the cheese melts.
  9. Garnish with parsley and serve hot.

  • Add cooked bacon bits for extra flavor.
  • Mix in sliced sausage or diced ham for a heartier meal.
  • Try Monterey Jack or mozzarella cheese for a different cheesy twist.
