Amish Onion Chicken Bake

Ingredients

  • 2 pounds boneless, skinless chicken breasts (about 4 medium pieces)
  • 3 large sweet onions (such as Vidalia), thinly sliced
  • 1/2 cup (1 stick / 113 g) unsalted butter, melted

Directions

  1. Preheat your oven to 325°F (165°C). Lightly grease a 9×13-inch casserole dish.
  2. Spread the sliced onions evenly across the bottom of the dish.
  3. Arrange the chicken breasts in a single layer over the onions.
  4. Pour the melted butter evenly over the chicken and onions.
  5. Cover the dish tightly with aluminum foil.
  6. Bake for 1 hour 30 minutes, or until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  7. Remove the foil during the last 15 minutes of baking if you would like the onions to brown slightly.
  8. Let the chicken rest for 5 minutes before serving.

  • Fresh bread to soak up the buttery onion sauce
