Sweet, juicy, and incredibly easy to make, this Slow Cooker Pineapple Chicken is the perfect weeknight dinner. Tender chicken breasts slow-cook in a delicious pineapple sauce with a touch of sweetness that creates a tropical-inspired meal the whole family will enjoy. Just add the ingredients, set it, and let the slow cooker do the work!

 Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (20 oz / 567 g) crushed pineapple, undrained
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water

 Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Pour the crushed pineapple (with its juice) over the chicken.
  3. Add the brown sugar, soy sauce, garlic, and ginger. Stir gently to combine.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
  5. Remove the chicken and set aside.
  6. In a small bowl, mix the cornstarch and water until smooth.
  7. Stir the cornstarch mixture into the sauce in the slow cooker.
  8. Cover and cook on HIGH for an additional 10–15 minutes, or until the sauce thickens.
  9. Return the chicken to the slow cooker and coat with the sauce before serving.

  • Cook Time: 6–7 hours (LOW) or 3–4 hours (HIGH)
