Smashed Red Potatoes

- 1.5 lbs small red potatoes
- 2 tablespoons kosher salt
- 3 tablespoons olive oil
- Salt and pepper, to taste
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- ½ teaspoon fresh rosemary, chopped
- ½ teaspoon fresh thyme, chopped
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon chopped chives
Directions
- Preheat your oven to 425°F (220°C).
- Place the potatoes in a large pot and cover with water. Add the kosher salt.
- Bring to a boil and cook for 15–20 minutes, or until the potatoes are fork-tender.
- Drain and let them cool slightly.
- Arrange the potatoes on a parchment-lined baking sheet. Using the bottom of a glass or measuring cup, gently press each potato until slightly flattened.
- Brush with olive oil and season with salt and pepper.
- Bake for 20–25 minutes, or until golden brown and crispy.
- Meanwhile, melt the butter in a small saucepan. Add the garlic, rosemary, thyme, and black pepper, and cook for about 1 minute until fragrant.
- Remove the potatoes from the oven and drizzle the garlic-herb butter over them.
- Garnish with chopped chives and serve immediately.
