Ingredients

For the Bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1½ cups fresh or frozen cranberries, roughly chopped

For the Glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the sugar, eggs, and oil until smooth. Stir in the orange juice, orange zest, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Fold in the chopped cranberries evenly throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. To make the glaze, whisk together the powdered sugar and orange juice until smooth. Add more juice if needed to reach your desired consistency.
  10. Drizzle the glaze over the cooled bread and let it set before slicing.
