Sweet, sticky, garlicky chicken drumsticks baked until perfectly caramelized and served with a cool, crisp cucumber salad. A simple dinner that tastes like comfort food with a fresh twist.
Ingredients
For the Chicken Drumsticks
- 8 chicken drumsticks (about 2 lb / 900 g)
- 2 tbsp olive oil (30 ml)
- 1/3 cup honey (85 g)
- 3 tbsp soy sauce (45 ml)
- 5 garlic cloves, minced
- 1 tbsp ketchup
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tsp apple cider vinegar or lemon juice
For the Fresh Cucumber Salad
- 2 cucumbers, thinly sliced
- 1/4 red onion, thinly sliced
- 2 tbsp fresh parsley or dill, chopped
- 2 tbsp vinegar or lemon juice
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
Step 1: Prepare the Chicken
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line a tray with parchment paper.
Pat the drumsticks dry with paper towels. This helps them roast beautifully and develop a golden skin.
Step 2: Make the Honey Garlic Sauce
In a bowl, whisk together:
- honey
- soy sauce
- minced garlic
- ketchup
- paprika
- olive oil
- black pepper
- salt
- vinegar or lemon juice
The sauce should smell sweet, savory, and garlicky.
Step 3: Coat the Drumsticks
Place the drumsticks in a large bowl or zip bag and pour the sauce over them. Toss until every piece is fully coated.
For deeper flavor, let the chicken marinate for 30 minutes, or overnight in the refrigerator if you have time.
Step 4: Bake
Arrange the drumsticks in a single layer on the baking tray.
Bake for 35–45 minutes, turning halfway through and spooning extra sauce over the top. The chicken should become sticky, glossy, and slightly caramelized around the edges.
For extra crispiness, broil for 2–3 minutes at the end.
Step 5: Make the Cucumber Salad
While the chicken bakes, combine cucumbers, onion, and herbs in a bowl.
Drizzle with olive oil and vinegar or lemon juice. Season with salt and pepper, then toss gently.
Chill until ready to serve.
