 Soft Quark Muffins (Full Recipe)

 About this recipe

Quark muffins are super soft, fluffy, and slightly moist because of quark (a fresh creamy cheese similar to thick yogurt). They stay tender for days and are very easy to make.

 Ingredients (Makes about 12 muffins)

Wet ingredients:

  • 250 g quark (or soft fresh cheese / “Magerquark”)
  • 2 eggs
  • 100 g sugar (you can reduce if you prefer less sweet)
  • 1 packet vanilla sugar OR 1 tsp vanilla extract
  • 100 ml vegetable oil (sunflower or neutral oil)
  • 100 ml milk

Dry ingredients:

  • 250 g all-purpose flour
  • 1 packet baking powder (about 10–12 g)
  • 1 pinch of salt

Optional add-ins (for extra flavor):

  • Lemon zest
  • Chocolate chips
  • Blueberries or strawberries
  • Cinnamon or extra vanilla

 Step-by-step instructions

 Prepare the oven

  • Preheat your oven to 180°C (350°F).
  • Line a muffin tray with paper liners or lightly grease it.

 Make the wet mixture

In a large bowl:

  • Add quark, eggs, sugar, and vanilla
  • Mix until smooth and creamy
  • Add oil and milk
  • Stir again until everything is well combined

You should get a smooth, slightly thick batter.

 Prepare the dry mixture

In another bowl:

  • Mix flour, baking powder, and salt
  • Stir well so the baking powder is evenly distributed

 Combine wet and dry ingredients

  • Slowly add the dry mixture into the wet mixture
  • Stir gently just until combined

Important: Do NOT overmix or the muffins will become dense instead of fluffy.


 Add extras (optional)

  • Fold in chocolate chips, berries, or lemon zest gently

 Fill the muffin tray

  • Fill each muffin cup about ¾ full
  • Do not overfill to avoid overflow while baking

Bake

  • Bake for 20–25 minutes
  • Muffins are ready when:
    • Golden on top
    • A toothpick inserted in the center comes out clean

 After baking

  • Let them cool in the tray for 10 minutes
  • Then transfer to a wire rack to cool completely

 Result

  • Soft and fluffy texture
  • Lightly sweet and creamy
  • Moist inside (thanks to quark)
  • Stays fresh for 2–3 days

 Baking tips

  • Don’t overmix the batter
  • Use room-temperature ingredients for better texture
  • Add chocolate chips for a dessert version
  • Add lemon zest for a fresh taste
  • For a healthier version, reduce sugar or use whole wheat flour partially
