Slow Cooker Potatoes and Butter Beans
Ingredients
- 2 lbs potatoes, peeled and chopped
- 2 cans butter beans, drained
- 1 small onion, chopped
- 2 garlic cloves, minced
- 4 tbsp butter
- 4 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp thyme
- 1 tbsp olive oil
Instructions
- Add the potatoes, butter beans, onion, and garlic to the slow cooker.
- Add butter, olive oil, salt, pepper, paprika, and thyme.
- Pour in the chicken broth and stir lightly.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the potatoes are tender.
- Mash a few potatoes for a creamier texture if desired.
- Serve hot with bread, biscuits, or cornbread.
