Slow Cooker Potatoes and Butter Beans

Ingredients

  • 2 lbs potatoes, peeled and chopped
  • 2 cans butter beans, drained
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 tbsp butter
  • 4 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp thyme
  • 1 tbsp olive oil

Instructions

  1. Add the potatoes, butter beans, onion, and garlic to the slow cooker.
  2. Add butter, olive oil, salt, pepper, paprika, and thyme.
  3. Pour in the chicken broth and stir lightly.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the potatoes are tender.
  5. Mash a few potatoes for a creamier texture if desired.
  6. Serve hot with bread, biscuits, or cornbread.

  • Fresh parsley
  • Red pepper flakes
