These Slow Cooker Snowballs are one of the easiest and most festive holiday desserts you can make. They are soft, sweet, crunchy, and coated in creamy white chocolate with coconut and almonds. Perfect for Christmas parties, gift boxes, or just a cozy winter snack at home.

The best part? You don’t need an oven — everything comes together in a slow cooker with almost no effort.

 Ingredients

  • 2 bags (about 340 g each) white chocolate chips
  • 1 ½ cups shredded coconut (unsweetened or sweetened, depending on taste)
  • 1 cup sliced or slivered almonds
  • 1 ½ cups crispy rice cereal (like Rice Krispies)
  • 1 teaspoon vanilla extract (optional, but adds flavor)
  • A pinch of salt (optional, to balance sweetness)

 Instructions

1. Melt the white chocolate

Place the white chocolate chips into your slow cooker. Set it to LOW heat.
Let the chocolate melt slowly for about 20–30 minutes, stirring occasionally so it doesn’t burn.

Tip: Do not use HIGH heat because white chocolate can burn easily.

2. Mix everything together

Once the chocolate is completely melted and smooth:

  • Add shredded coconut
  • Add sliced almonds
  • Add crispy rice cereal
  • Add vanilla extract (if using)
  • Add a small pinch of salt

Now stir everything slowly but thoroughly until all ingredients are fully coated in the melted white chocolate mixture.

The mixture should become thick, sticky, and slightly chunky.

3. Shape the snowballs

Prepare a tray or baking sheet with parchment paper.

Using a spoon or small ice cream scoop:

  • Scoop small portions of the mixture
  • Drop them onto the tray
  • Gently shape them into round “snowball” clusters using your hands or spoon

Don’t worry if they are not perfectly round — the rustic look makes them more homemade and festive.

4. Let them set

Allow the snowballs to cool at room temperature for about 1–2 hours, or place them in the refrigerator for 30–45 minutes to speed up the process.

Once they are firm, they will hold their shape perfectly.
