 Keto Roasted Red Pepper, Spinach & Mozzarella Stuffed Chicken

Juicy chicken breasts stuffed with melty mozzarella, roasted red peppers, and sautéed spinach… this low-carb dinner is packed with flavor and super satisfying!

 Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup roasted red peppers, sliced
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt & black pepper, to taste
  • Toothpicks or kitchen twine

 Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  3. Heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and spinach, cooking until wilted.
  4. Stuff each chicken breast with spinach, roasted red peppers, and mozzarella cheese. Secure with toothpicks if needed.
  5. Rub chicken with remaining olive oil and season with paprika, Italian seasoning, salt, and pepper.
  6. Place chicken in a baking dish and bake for 25–30 minutes, or until the chicken is fully cooked and the cheese is melted.
  7. Let rest for 5 minutes before serving. Enjoy!
