Keto Roasted Red Pepper, Spinach & Mozzarella Stuffed Chicken
Juicy chicken breasts stuffed with melty mozzarella, roasted red peppers, and sautéed spinach… this low-carb dinner is packed with flavor and super satisfying!
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach
- 1/2 cup roasted red peppers, sliced
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt & black pepper, to taste
- Toothpicks or kitchen twine
Instructions
- Preheat oven to 375°F (190°C).
- Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and spinach, cooking until wilted.
- Stuff each chicken breast with spinach, roasted red peppers, and mozzarella cheese. Secure with toothpicks if needed.
- Rub chicken with remaining olive oil and season with paprika, Italian seasoning, salt, and pepper.
- Place chicken in a baking dish and bake for 25–30 minutes, or until the chicken is fully cooked and the cheese is melted.
- Let rest for 5 minutes before serving. Enjoy!
