Zucchine Tonde Ripiene di Riso (Round Zucchini Stuffed with Rice)

These stuffed round zucchinis are a comforting Italian-inspired dish, perfect as a main course or a hearty side. The rice filling becomes creamy inside, while the top turns beautifully crispy in the oven.
Ingredients (Serves 4)
- 4 round zucchinis
- 120 g (½ cup) short-grain rice
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 200 g (¾ cup) tomato sauce
- 50 g (½ cup) grated Parmesan cheese
- 100 g (1 cup) shredded mozzarella
- 1 garlic clove, minced
- Fresh parsley, chopped
- Salt and black pepper to taste
- Optional: 100 g ground beef or sausage (for extra richness)
Instructions
1. Prepare the zucchinis
Wash the zucchinis and cut off the tops (keep them as lids).
Scoop out the inside using a spoon, leaving a thin shell.
Chop the pulp and set it aside.
2. Cook the rice
Boil the rice in salted water for about 8–10 minutes (slightly undercooked).
Drain and set aside.
3. Make the filling
In a pan, heat olive oil and sauté the onion and garlic until soft.
Add the chopped zucchini pulp and cook for 5 minutes.
If using meat, add it now and cook until browned.
Stir in the tomato sauce and simmer for a few minutes.
Add the rice, parsley, salt, and pepper. Mix well.
4. Stuff the zucchinis
Fill each zucchini with the rice mixture.
Top with Parmesan and mozzarella for that irresistible cheesy crust.
5. Bake
Place the stuffed zucchinis in a baking dish.
Add a little water or sauce at the bottom to keep them moist.
Cover with foil and bake at 180°C (350°F) for 25 minutes.
Remove foil and bake another 10–15 minutes until golden and bubbly.

Serve hot with a fresh salad or crusty bread.
