Caramel Nut Candy (Oklahoma Style)
Introduction
Caramel Nut Candy is a classic old-fashioned treat known for its rich buttery caramel coating and crunchy roasted nuts. This homemade candy is easy to make with simple ingredients and delivers a delicious balance of sweet, salty, and crunchy textures. Perfect for holidays, gifts, or everyday snacking.
Ingredients
- 1 cup granulated sugar
- 1/2 cup heavy cream (or whole milk)
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 1/2 cups roasted nuts (pecans, peanuts, or almonds)
- 1/2 teaspoon baking soda
- Pinch of salt (optional but recommended)
Instructions
1. Prepare the nuts
Lightly toast the nuts in a dry pan over medium heat for 5–7 minutes until fragrant. Set aside.
2. Make the caramel base
In a heavy saucepan, add the sugar over medium heat. Let it melt slowly without stirring until it turns into a golden caramel color.
3. Add cream carefully
Reduce the heat and slowly pour in the cream while stirring continuously. The mixture will bubble—this is normal.
4. Add butter and vanilla
Stir in the butter and vanilla extract until smooth and glossy.
5. Add baking soda
Quickly mix in the baking soda. The caramel will foam and become lighter and airy in texture.
6. Add nuts
Immediately fold in the roasted nuts and mix until fully coated.
7. Shape and cool
Pour the mixture onto parchment paper or a greased tray. Spread it evenly and let it cool completely.
8. Break and serve
Once hardened, break into bite-sized pieces and enjoy.
