Everything Bagel Keto Cucumber Sushi Bites
Ingredients
- 1 large English cucumber (or 2 regular cucumbers)
- 120–150 g cream cheese, softened
- 1–2 tbsp Greek yogurt or sour cream (optional, for extra creaminess)
- 1 tsp lemon juice
- 1 tsp garlic powder
- 1 tsp dried chives (or fresh, finely chopped)
- 1 tsp dried dill
- Salt & black pepper to taste
- 2–3 tbsp everything bagel seasoning
- Optional toppings:
- Smoked salmon pieces
- Avocado cubes
- Red pepper flakes
Instructions
1. Prepare the cucumber
- Wash the cucumber well.
- Slice it into thick rounds (about 2–3 cm thick).
- Use a small spoon or melon baller to scoop a little “cup” in the center of each slice (don’t go all the way through).
2. Make the creamy filling
- In a bowl, mix:
- Cream cheese
- Greek yogurt (if using)
- Lemon juice
- Garlic powder
- Chives
- Dill
- Salt & pepper
- Stir until smooth and fluffy.
3. Fill the bites
- Spoon or pipe the cream cheese mixture into each cucumber cup.
4. Add the crunch
- Sprinkle everything bagel seasoning generously on top.
5. Optional upgrade
- Add a tiny piece of smoked salmon or avocado on top for a more “sushi-style” bite.
Serving tip
- Best served chilled (10–20 minutes in the fridge before eating makes them extra refreshing).
- Eat fresh so the cucumber stays crisp.
