Date Crumble Bars (Chewy & Nostalgic)

Ingredients:

For the crust & topping:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter, melted

For the filling:

  • 2 cups chopped dates
  • 3/4 cup water
  • 1 tablespoon lemon juice
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat oven to 180°C (350°F). Grease a square baking pan (8×8 inch).
  2. In a saucepan, combine dates and water. Cook over medium heat until soft and thick (about 5–10 minutes). Stir in lemon juice and nuts, then let cool.
  3. In a bowl, mix flour, oats, brown sugar, baking soda, and salt.
  4. Add melted butter and mix until crumbly.
  5. Press half of the mixture into the pan to form the base.
  6. Spread the date filling evenly over the base.
  7. Sprinkle the remaining crumb mixture on top.
  8. Bake for 25–30 minutes until golden brown.
  9. Let cool completely, then cut into squares.
