Juicy chicken breasts wrapped around a creamy broccoli-cheddar filling, then baked until golden, bubbly, and irresistibly cheesy. This low-carb dinner feels fancy but is simple enough for any weeknight.
Ingredients
- 4 large boneless, skinless chicken breasts
- 1½ cups finely chopped broccoli (lightly steamed and drained)
- 1 cup shredded cheddar cheese
- 2 oz cream cheese, softened
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 2 tablespoons olive oil or melted butter
- Toothpicks (to secure)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Slice each chicken breast horizontally to create a thin cutlet. Pound slightly if thick.
- In a bowl, mix broccoli, cheddar, cream cheese, garlic, paprika, Italian seasoning, salt, and pepper.
- Divide the filling over each chicken piece.
- Roll up tightly and secure with toothpicks.
- Place rollups seam-side down in the baking dish. Brush with olive oil or butter.
- Bake for 25–30 minutes, until chicken is cooked through and the tops are lightly golden.
- Let rest 5 minutes, remove toothpicks, and serve.
