Juicy chicken breasts wrapped around a creamy broccoli-cheddar filling, then baked until golden, bubbly, and irresistibly cheesy. This low-carb dinner feels fancy but is simple enough for any weeknight.

Ingredients

  • 4 large boneless, skinless chicken breasts
  • 1½ cups finely chopped broccoli (lightly steamed and drained)
  • 1 cup shredded cheddar cheese
  • 2 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or melted butter
  • Toothpicks (to secure)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Slice each chicken breast horizontally to create a thin cutlet. Pound slightly if thick.
  3. In a bowl, mix broccoli, cheddar, cream cheese, garlic, paprika, Italian seasoning, salt, and pepper.
  4. Divide the filling over each chicken piece.
  5. Roll up tightly and secure with toothpicks.
  6. Place rollups seam-side down in the baking dish. Brush with olive oil or butter.
  7. Bake for 25–30 minutes, until chicken is cooked through and the tops are lightly golden.
  8. Let rest 5 minutes, remove toothpicks, and serve.

Tips

  • Squeeze excess water from broccoli to keep the filling thick.
  • Add a sprinkle of Parmesan on top before baking for extra flavor.
