Ingredients
- 2 cups mixed peppers (red & yellow, thinly sliced)
- 1 cup onion (thinly sliced)
- 1/2 cup white vinegar
- 1/4 cup apple cider vinegar
- 1/2 cup sugar
- 1/2 cup water
- 1 tsp mustard seeds
- 1/2 tsp black pepper flakes
- 1/2 tsp salt
- 1 clove garlic (minced)
Instructions
- In a saucepan, combine white vinegar, apple cider vinegar, sugar, water, salt, mustard seeds, and black pepper flakes.
- Bring to a gentle simmer, stirring until the sugar fully dissolves.
- Add the sliced peppers, onions, and minced garlic.
- Simmer for 10–15 minutes, until the vegetables are slightly softened but still crunchy.
- Remove from heat and let cool slightly.
- Transfer the relish and liquid into clean jars, making sure everything is fully submerged.
- Refrigerate for at least 2 hours before serving (best after overnight chilling).
