Ingredients

  • 2 cups mixed peppers (red & yellow, thinly sliced)
  • 1 cup onion (thinly sliced)
  • 1/2 cup white vinegar
  • 1/4 cup apple cider vinegar
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tsp mustard seeds
  • 1/2 tsp black pepper flakes
  • 1/2 tsp salt
  • 1 clove garlic (minced)

Instructions

  1. In a saucepan, combine white vinegar, apple cider vinegar, sugar, water, salt, mustard seeds, and black pepper flakes.
  2. Bring to a gentle simmer, stirring until the sugar fully dissolves.
  3. Add the sliced peppers, onions, and minced garlic.
  4. Simmer for 10–15 minutes, until the vegetables are slightly softened but still crunchy.
  5. Remove from heat and let cool slightly.
  6. Transfer the relish and liquid into clean jars, making sure everything is fully submerged.
  7. Refrigerate for at least 2 hours before serving (best after overnight chilling).

Pro Tip

For a spicy kick, add a pinch of red chili flakes or a sliced jalapeño before simmering!
