Chocolate Peanut Clusters
Ingredients:
- 2 cups roasted peanuts (unsalted or lightly salted)
- 1 ½ cups chocolate chips (milk or dark chocolate)
- 1 tbsp coconut oil or butter (optional, for a smoother texture)
Instructions:
- Melt the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring each time until fully melted and smooth. (You can also use a double boiler.)
- Add the coconut oil or butter (if using) and mix well until glossy and smooth.
- Stir in the roasted peanuts until they are completely coated in chocolate.
- Line a baking tray with parchment paper.
- Spoon small clusters of the mixture onto the tray.
- Let them set at room temperature or place in the refrigerator for 20–30 minutes until firm.
- Once hardened, serve and enjoy!
Optional Tips:
- You can add raisins, almonds, cashews, or cornflakes for extra crunch.
- Store in an airtight container at room temperature or in the fridge for longer freshness.
