Chocolate Peanut Clusters 

Ingredients:

  • 2 cups roasted peanuts (unsalted or lightly salted)
  • 1 ½ cups chocolate chips (milk or dark chocolate)
  • 1 tbsp coconut oil or butter (optional, for a smoother texture)

Instructions:

  1. Melt the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring each time until fully melted and smooth. (You can also use a double boiler.)
  2. Add the coconut oil or butter (if using) and mix well until glossy and smooth.
  3. Stir in the roasted peanuts until they are completely coated in chocolate.
  4. Line a baking tray with parchment paper.
  5. Spoon small clusters of the mixture onto the tray.
  6. Let them set at room temperature or place in the refrigerator for 20–30 minutes until firm.
  7. Once hardened, serve and enjoy!

Optional Tips:

  • You can add raisins, almonds, cashews, or cornflakes for extra crunch.
  • Store in an airtight container at room temperature or in the fridge for longer freshness.
