Ingredients
- 2 cups red bell peppers, finely chopped
- 1/2 cup jalapeños, seeded and finely chopped
- 1 cup granulated sugar (or sugar-free substitute)
- 1/2 cup apple cider vinegar
- 2 tbsp lemon juice
- 1 tsp garlic, minced
- 1/2 tsp salt
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tbsp pectin (optional, for thicker texture)
Instructions
- Add the chopped bell peppers and jalapeños to a saucepan over medium heat.
- Stir in the vinegar, lemon juice, and garlic. Cook for 5 minutes until softened.
- Add the sugar (or substitute) and salt, stirring until dissolved.
- Bring to a gentle boil, then reduce heat and simmer for 15 to 20 minutes.
- Stir occasionally until the mixture thickens to a jam-like consistency.
- If using pectin, stir it in during the last 5 minutes of cooking.
- Remove from heat and let cool slightly. The jam will thicken more as it cools.
- Transfer to a jar and refrigerate until ready to serve.
Serving Ideas
Spread over cream cheese with crackers, or use as a glaze for meats and sandwiches.
