Ingredients

  • 2 cups red bell peppers, finely chopped
  • 1/2 cup jalapeños, seeded and finely chopped
  • 1 cup granulated sugar (or sugar-free substitute)
  • 1/2 cup apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tsp garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp pectin (optional, for thicker texture)

Instructions

  1. Add the chopped bell peppers and jalapeños to a saucepan over medium heat.
  2. Stir in the vinegar, lemon juice, and garlic. Cook for 5 minutes until softened.
  3. Add the sugar (or substitute) and salt, stirring until dissolved.
  4. Bring to a gentle boil, then reduce heat and simmer for 15 to 20 minutes.
  5. Stir occasionally until the mixture thickens to a jam-like consistency.
  6. If using pectin, stir it in during the last 5 minutes of cooking.
  7. Remove from heat and let cool slightly. The jam will thicken more as it cools.
  8. Transfer to a jar and refrigerate until ready to serve.

Serving Ideas

Spread over cream cheese with crackers, or use as a glaze for meats and sandwiches.

For deeper flavor, roast the peppers before chopping to add a light smoky sweetness.
