Slow Cooker White Beans & Potatoes (3-Ingredient Comfort Meal)

A simple, budget-friendly recipe that’s hearty, filling, and full of comfort—just like old-fashioned home cooking.

Ingredients:

  • 2 cups white beans (canned, drained & rinsed OR soaked dried beans)
  • 2–3 medium potatoes, peeled and cut into chunks
  • 3 cups broth (chicken or vegetable)

Optional (for extra flavor):

  • 1 small onion, chopped
  • Salt & black pepper, to taste
  • ½ tsp dried herbs (thyme or parsley)

Instructions:

  1. Add the white beans, potatoes, and broth into your slow cooker.
  2. If using, add onion, salt, pepper, and herbs.
  3. Stir everything together gently.
  4. Cover and cook:
    • Low: 6–8 hours
    • High: 3–4 hours
  5. Once the potatoes are soft and tender, the dish is ready to serve.

Tips:

  • Mash a few potatoes slightly to make the broth thicker and creamier.
  • Serve with bread for a more filling meal.
  • You can add a drizzle of olive oil before serving for extra richness.
