 Ingredients

  • 4–5 lb beef chuck roast
  • 2–3 tsp garlic salt
  • 2 tsp black pepper
  • 2–3 tbsp vegetable oil
  • 1 large onion (sliced)
  • 4–8 cloves garlic
  • 1 packet onion or mushroom soup mix
  • 3 cups beef or chicken broth
  • 1–2 tbsp Worcestershire sauce
  • 1–2 sprigs thyme (optional)
  • 1 sprig rosemary (optional)
  • 2 tbsp flour (for gravy)
  • 2 tbsp heavy cream (optional, for creamy finish)

This type of recipe typically uses a chuck roast and slow cooking to make the meat fall-apart tender with rich gravy.

 Instructions

1. Season & Sear

  • Pat the beef dry
  • Season with garlic salt and pepper
  • Heat oil in a pan and sear all sides until browned

Searing adds deeper flavor before slow cooking.

2. Build the Base

  • Add sliced onions and garlic to the slow cooker
  • Place the seared roast on top

3. Add Liquid & Flavor

  • Pour in broth
  • Add Worcestershire sauce
  • Sprinkle soup mix over the roast
  • Add herbs if using

4. Slow Cook

  • Cook on LOW for 8 hours or HIGH for 5–6 hours
  • Meat should be fork-tender

5. Make the Gravy

  • Remove roast
  • Mix flour with a little liquid from the cooker
  • Stir back in and cook until thickened
  • Add heavy cream (optional) for a creamy texture

Some versions finish the gravy with cream for extra richness.
