 Slow Cooker Beef Ramen Noodles

 Ingredients

  • 1 pound ground beef
  • 1 cup matchstick carrots
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 3 cups beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger (or 1 tbsp fresh grated ginger)
  • 1 tablespoon cornstarch + 2 tablespoons water (optional, for thicker sauce)
  • 2 packs ramen noodles (discard seasoning packets)
  • Green onions (for garnish)
  • Sesame seeds (optional)

 Instructions

  1. Brown the beef (optional but better flavor):
    In a pan, cook the ground beef until no longer pink. Drain excess fat.
  2. Add to slow cooker:
    Add beef, carrots, bell pepper, onion, garlic, beef broth, soy sauce, brown sugar, sesame oil, and ginger.
  3. Cook:
    • Low: 4–6 hours
    • High: 2–3 hours
  4. Thicken sauce (optional):
    Mix cornstarch + water, stir into slow cooker 20–30 minutes before serving.
  5. Add noodles:
    Break ramen noodles in half and stir them in. Cook on HIGH for 10–15 minutes until soft.
  6. Serve:
    Top with green onions and sesame seeds.

 Tip

Don’t add the noodles too early or they’ll get mushy — always add at the end.
