Heavenly Comforting Soup Chicken & Veggie Style
Ingredients
- 2 cups cooked chicken (shredded or diced)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 potato, diced (for thickness)
- 6 cups chicken broth
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp dried thyme or mixed herbs
- ½ cup cream (optional, for creamy version)
- Fresh parsley (for garnish)
Instructions
- Sauté the base
Heat olive oil in a pot. Add onion and cook 5–6 minutes until soft. Add garlic and cook 30 seconds. - Add vegetables
Stir in carrots, celery, and potato. Cook for 3–4 minutes. - Simmer
Pour in chicken broth and bring to a boil. Reduce heat and simmer 20–25 minutes until vegetables are tender. - Add chicken & seasoning
Add shredded chicken, salt, pepper, and herbs. Simmer another 10 minutes. - Make it creamy (optional)
Stir in cream and heat gently (don’t boil). - Serve
Garnish with parsley and enjoy warm
Tips
- You can blend part of the soup for a thicker texture (common in creamy soups)
- Add rice, noodles, or chickpeas to make it more filling
- Tastes even better the next day like most soups!
