 Cottage Cheese Parmesan Firecracker Chicken

Ingredients:

  • 1 lb (450 g) chicken breast, cut into cubes
  • 1 cup cottage cheese
  • 1/3 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp black pepper (adjust to taste)
  • 1 tbsp oil (olive oil or any cooking oil)
  • Optional: salt, garlic powder, chili flakes (for extra heat)

Instructions:

  1. Season the chicken
    Toss the chicken cubes with paprika, black pepper, and a pinch of salt if needed.
  2. Cook the chicken
    Heat oil in a pan over medium heat. Add the chicken and cook for 6–8 minutes until golden and fully cooked.
  3. Make the creamy sauce
    Lower the heat. Add cottage cheese and stir gently until it starts to melt and become creamy.
  4. Add Parmesan
    Sprinkle in the Parmesan cheese and mix well until the sauce thickens and coats the chicken.
  5. Adjust & serve
    Taste and adjust seasoning. Add chili flakes if you want more “firecracker” heat.

Serving ideas:

  • Over rice or pasta
  • With roasted vegetables
  • In a wrap or sandwich
