 Keto Cowboy Cookies

 Ingredients

  • 1½ cups almond flour
  • ¼ cup unsweetened shredded coconut
  • ¼ cup chopped pecans or walnuts
  • ¼ cup sugar-free dark chocolate chips
  • 2 tbsp chia seeds
  • ½ tsp baking soda
  • ¼ tsp salt

Wet ingredients:

  • ¼ cup unsalted butter (softened)
  • ¼ cup erythritol (or keto sweetener)
  • 1 large egg
  • ½ tsp vanilla extract
  • ¼ cup sugar-free maple syrup (or honey substitute)

 Instructions

1. Prep

  • Preheat oven to 175°C (350°F)
  • Line a baking tray with parchment paper

2. Mix dry ingredients

  • In a bowl, combine: almond flour + coconut + nuts + chocolate chips + chia seeds + baking soda + salt

3. Mix wet ingredients

  • In another bowl, beat: butter + sweetener → until creamy
  • Add egg + vanilla → mix well
  • Add sugar-free syrup

4. Combine

  • Mix wet + dry ingredients until dough forms
  • If sticky → chill 10–15 minutes

5. Shape & bake

  • Form small balls (1–2 tbsp each)
  • Place on tray and flatten slightly
  • Bake 10–12 minutes until edges are golden

6. Cool

  • Let cool on tray a few minutes
  • Then transfer to rack

  • Carbs: ~4g (low-carb/keto)
  • Protein: ~3g
  • Fat: ~10g

 Tips

  • Use good sugar-free chocolate for best taste
  • Don’t overbake → they firm up after cooling
  • Add cinnamon or coconut flakes for extra flavor
