Keto Cowboy Cookies
Ingredients
- 1½ cups almond flour
- ¼ cup unsweetened shredded coconut
- ¼ cup chopped pecans or walnuts
- ¼ cup sugar-free dark chocolate chips
- 2 tbsp chia seeds
- ½ tsp baking soda
- ¼ tsp salt
Wet ingredients:
- ¼ cup unsalted butter (softened)
- ¼ cup erythritol (or keto sweetener)
- 1 large egg
- ½ tsp vanilla extract
- ¼ cup sugar-free maple syrup (or honey substitute)
Instructions
1. Prep
- Preheat oven to 175°C (350°F)
- Line a baking tray with parchment paper
2. Mix dry ingredients
- In a bowl, combine: almond flour + coconut + nuts + chocolate chips + chia seeds + baking soda + salt
3. Mix wet ingredients
- In another bowl, beat: butter + sweetener → until creamy
- Add egg + vanilla → mix well
- Add sugar-free syrup
4. Combine
- Mix wet + dry ingredients until dough forms
- If sticky → chill 10–15 minutes
5. Shape & bake
- Form small balls (1–2 tbsp each)
- Place on tray and flatten slightly
- Bake 10–12 minutes until edges are golden
6. Cool
- Let cool on tray a few minutes
- Then transfer to rack

Tips
