Chicken Zucchini Bake
Ingredients:
- 2 cups shredded cooked chicken
- 3 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1 teaspoon garlic powder
- Salt & black pepper to taste
- 1 tablespoon olive oil (optional) Instructions:
- Preheat oven to 180°C (350°F).
- Prep the zucchini:
Lightly sauté the sliced zucchini in a pan with a little olive oil for 3–5 minutes (this helps remove excess water and keeps the bake from getting watery). - Make the creamy mixture:
In a large bowl, mix:- Shredded chicken
- Cream cheese
- Garlic powder
- Salt & pepper
Stir until well combined and creamy.
- Assemble the bake:
- In a baking dish, layer the zucchini and cherry tomatoes.
- Spread the chicken mixture evenly on top.
- Sprinkle mozzarella and Parmesan cheese over everything.
- Bake:
Place in the oven and bake for 25–30 minutes, or until the cheese is melted and golden. - Optional finish:
Broil for 2–3 minutes for a crispy, golden top.
Tips:
- Add a pinch of Italian herbs for extra flavor.
- Swap chicken for turkey if you want variation.
- Let it rest 5 minutes before serving—it thickens nicely.
