Chicken Zucchini Bake

Ingredients:

  • 2 cups shredded cooked chicken
  • 3 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • Salt & black pepper to taste
  • 1 tablespoon olive oil (optional) Instructions:
  1. Preheat oven to 180°C (350°F).
  2. Prep the zucchini:
    Lightly sauté the sliced zucchini in a pan with a little olive oil for 3–5 minutes (this helps remove excess water and keeps the bake from getting watery).
  3. Make the creamy mixture:
    In a large bowl, mix:

    • Shredded chicken
    • Cream cheese
    • Garlic powder
    • Salt & pepper
      Stir until well combined and creamy.
  4. Assemble the bake:
    • In a baking dish, layer the zucchini and cherry tomatoes.
    • Spread the chicken mixture evenly on top.
    • Sprinkle mozzarella and Parmesan cheese over everything.
  5. Bake:
    Place in the oven and bake for 25–30 minutes, or until the cheese is melted and golden.
  6. Optional finish:
    Broil for 2–3 minutes for a crispy, golden top.

 Tips:

  • Add a pinch of Italian herbs for extra flavor.
  • Swap chicken for turkey if you want variation.
  • Let it rest 5 minutes before serving—it thickens nicely.
