Honey Garlic Chicken Stir Fry

Ingredients

  • 1 tbsp + 1 tsp vegetable oil (divided)
  • 1 cup thinly sliced carrots
  • 2 cups broccoli florets
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 4 cloves garlic, minced
  • ¼ cup low-sodium chicken broth (or water)
  • ¼ cup soy sauce
  • ¼ cup honey
  • 1 tbsp cornstarch
  • 2 tbsp cold water (to mix with cornstarch)
  • 1 tsp fresh ginger, grated (optional)
  • Salt and black pepper to taste
  • Sesame seeds and green onions for garnish (optional)

Instructions

  1. Make the sauce
    In a bowl, whisk together chicken broth, soy sauce, honey, garlic, and ginger.
  2. Cook the vegetables
    Heat 1 tsp oil in a large pan or wok over medium-high heat. Add carrots and broccoli. Stir fry 3–4 minutes until slightly tender. Remove and set aside.
  3. Cook the chicken
    Add remaining 1 tbsp oil to the pan. Add chicken pieces, season lightly with salt and pepper, and cook 5–6 minutes until golden and cooked through.
  4. Combine
    Return vegetables to the pan with the chicken. Pour in the sauce and stir well.
  5. Thicken the sauce
    Mix cornstarch with 2 tbsp cold water. Add to the pan and stir for 1–2 minutes until the sauce thickens and coats everything.
  6. Serve
    Garnish with sesame seeds and chopped green onions. Serve hot over rice or noodles.

Tips

  • Add bell peppers, snap peas, or mushrooms for extra veggies.
  • For spicy flavor, add chili flakes or sriracha.
  • Best served fresh and hot.
