Cheesy French Onion Hamburger Casserole
A rich, cozy, and budget-friendly casserole layered with seasoned beef, tender potatoes, creamy sauce, and topped with gooey melted cheese and crispy onions. Perfect for family dinners!
Ingredients
The Beef Layer:
- 1 lb (450g) ground beef (80/20)
- ½ yellow onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional)
The Potato Layer:
- 4–5 medium potatoes, peeled and thinly sliced
- 1 packet French onion soup mix
- 2 tablespoons olive oil or melted butter
The Creamy Sauce:
- 1 can (10.5 oz / ~300g) cream of mushroom soup
- ½ cup milk
- ½ cup sour cream (optional but recommended)
- ½ teaspoon garlic powder
The Topping:
- 2 cups shredded Colby Jack cheese (or cheddar)
- 1–1½ cups crispy fried onions
Instructions
Preheat the oven
- Set your oven to 375°F (190°C).
- Lightly grease a baking dish (9×13 inch).
Cook the beef
- In a skillet over medium heat:
- Cook the ground beef with diced onion until browned.
- Add garlic, salt, pepper, and paprika.
- Stir well and cook for 1–2 minutes more.
- Drain excess fat if needed.
Prepare the potatoes
- In a large bowl:
- Toss the sliced potatoes with French onion soup mix and olive oil.
- Make sure all slices are well coated.
Make the creamy sauce
- In another bowl:
- Mix cream of mushroom soup, milk, sour cream, and garlic powder until smooth.
Assemble the casserole
- In your baking dish:
- Add a layer of potatoes
- Spread half of the beef mixture
- Pour some of the creamy sauce
- Repeat layers (potatoes → beef → sauce)
- Finish with remaining sauce on top.
Bake (covered)
- Cover with foil and bake for 45–50 minutes, until potatoes are tender.
Add cheese & onions
- Remove foil:
- Sprinkle shredded cheese evenly
- Top with crispy fried onions
Final bake (uncovered)
- Bake for another 10–15 minutes, until:
- Cheese is melted and bubbly
- Top is golden and crispy
