Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce
Ingredients
Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt & black pepper
Broccoli:
- 3–4 cups broccoli florets
- 1 tbsp olive oil
- Salt to taste
Creamy Garlic Sauce:
- 1/2 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp mustard (optional)
- 2 tbsp mayonnaise
- Salt & pepper to taste
For serving:
- Cooked rice or quinoa
- Cherry tomatoes or avocado (optional)
Instructions
1. Prepare the chicken
- In a bowl, mix the chicken with olive oil, paprika, garlic powder, salt, and pepper.
- Let it marinate for 15–30 minutes.
- Grill (or cook in a hot pan) for about 5–7 minutes per side, until fully cooked.
- Let it rest, then slice.
2. Cook the broccoli
- Toss broccoli with olive oil and salt.
- Roast in the oven at 200°C (400°F) for 15–20 minutes, or steam until tender-crisp.
3. Make the sauce
- In a bowl, mix Greek yogurt, garlic, lemon juice, mustard, and mayonnaise.
- Season with salt and pepper.
- Stir until smooth and creamy.
4. Assemble the bowls
- Add rice or quinoa to a bowl.
- Top with broccoli and sliced chicken.
- Drizzle generously with the creamy garlic sauce.
