Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

 Ingredients

 Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & black pepper

 Broccoli:

  • 3–4 cups broccoli florets
  • 1 tbsp olive oil
  • Salt to taste

 Creamy Garlic Sauce:

  • 1/2 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp mustard (optional)
  • 2 tbsp mayonnaise
  • Salt & pepper to taste

 For serving:

  • Cooked rice or quinoa
  • Cherry tomatoes or avocado (optional)

 Instructions

1. Prepare the chicken

  • In a bowl, mix the chicken with olive oil, paprika, garlic powder, salt, and pepper.
  • Let it marinate for 15–30 minutes.
  • Grill (or cook in a hot pan) for about 5–7 minutes per side, until fully cooked.
  • Let it rest, then slice.

2. Cook the broccoli

  • Toss broccoli with olive oil and salt.
  • Roast in the oven at 200°C (400°F) for 15–20 minutes, or steam until tender-crisp.

3. Make the sauce

  • In a bowl, mix Greek yogurt, garlic, lemon juice, mustard, and mayonnaise.
  • Season with salt and pepper.
  • Stir until smooth and creamy.

4. Assemble the bowls

  • Add rice or quinoa to a bowl.
  • Top with broccoli and sliced chicken.
  • Drizzle generously with the creamy garlic sauce.

 Tips

  • Add avocado or tomatoes for extra flavor
  • Use brown rice for a healthier option
  • This recipe is great for meal prep
