Ultimate Chicken Club Pasta Salad
Ingredients
- 1 lb grilled chicken breast, diced
- 1 lb rotini or bowtie pasta, cooked and cooled
- 8 strips bacon, cooked until crispy and crumbled
Add-ins
- 1 cup cherry tomatoes, halved
- 1 cup lettuce or baby spinach, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, finely sliced
- 1 avocado, diced (optional but amazing)
Dressing
- 3/4 cup mayonnaise
- 1/4 cup Greek yogurt or sour cream
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp black pepper
- Salt to taste
Instructions
1. Cook pasta
- Boil pasta until al dente
- Drain and rinse with cold water
- Let it cool completely
2. Prepare protein
- Grill or pan-cook chicken, then dice it
- Cook bacon until crispy and crumble it
3. Mix dressing
- In a bowl, whisk mayo, yogurt, lemon juice, garlic powder, salt, and pepper until smooth
4. Assemble salad
- In a large bowl, combine: pasta + chicken + bacon + veggies + cheese
- Pour dressing over and mix well
5. Chill & serve
- Refrigerate for 30–60 minutes for best flavor
- Serve cold
Tips
- Add extra ranch or BBQ sauce for more flavor
- Don’t overdress—add a little at a time
- Best eaten within 2–3 days
