Mississippi Mud Potatoes
Ingredients
- 6–8 russet potatoes, peeled and diced
- 2 cups shredded cheddar cheese
- 1 cup mayonnaise (full-fat for best flavor)
- 8 slices bacon, cooked crispy and crumbled
- 1 small onion, finely chopped (optional but recommended)
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- 1/2 tsp paprika (optional)
- Chopped green onions or parsley (for garnish)
Instructions
- Preheat oven
Set your oven to 375°F (190°C). - Prepare potatoes
Peel and dice the potatoes into small cubes. You can rinse and pat them dry to remove excess starch. - Mix ingredients
In a large bowl, combine:- Diced potatoes
- Shredded cheese
- Mayonnaise
- Crumbled bacon
- Onion & garlic
- Salt, pepper, and paprika
Mix everything well until evenly coated.
- Transfer to baking dish
Grease a baking dish and spread the mixture evenly. - Bake
Cover with foil and bake for 45 minutes.
Then remove foil and bake another 15–20 minutes until:- Potatoes are tender
- Top is golden and slightly crispy
- Garnish & serve
Sprinkle with green onions or parsley and serve hot.
Tips
- Add a little sour cream for extra creaminess
- Use mozzarella + cheddar mix for extra cheesy texture
- For crispier edges, bake uncovered a bit longer
