 Slow Cooker Cajun Butter Potato Packets

 Ingredients

  • 1.5–3 lbs potatoes (baby potatoes or Yukon gold), cut into chunks
  • 1 lb smoked sausage, sliced
  • 1 lb green beans, trimmed (fresh or frozen)
  • 1 small onion, diced
  • ½ cup (1 stick) butter
  • 2 tbsp Cajun seasoning
  • 1 packet onion soup mix (optional but adds flavor)
  • 1–2 tbsp olive oil
  • ½ tsp garlic powder
  • Salt & black pepper to taste

 Instructions

  1. Prep everything
    • Wash and cut potatoes into bite-size pieces
    • Slice sausage and chop onion
  2. Layer in slow cooker
    • Add potatoes, onion, green beans, and sausage
  3. Season
    • Drizzle olive oil
    • Sprinkle Cajun seasoning, garlic powder, salt, pepper, and onion soup mix
    • Toss everything to coat well
  4. Add butter
    • Place the stick of butter on top
  5. Cook
    • LOW: 6–7 hours
    • HIGH: 4–5 hours
    • Cook until potatoes are tender
  6. Serve
    • Stir everything together before serving
    • Serve hot as a main dish or side

 Tips

  • Add shrimp at the end for a seafood twist
  • Use foil packets inside the slow cooker for a “packet-style” version
  • Adjust Cajun seasoning depending on how spicy you like it
