Ground Beef and Veggie Hobo Casserole

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
  • 3 cups diced potatoes
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Optional: 1 tsp garlic powder or paprika for extra flavor

Instructions

  1. Preheat the Oven
    Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the Ground Beef
    In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the chopped onion and cook until softened (about 3-4 minutes). Season with salt, pepper, and optional garlic powder or paprika.
  3. Prepare the Casserole
    In the greased baking dish, layer the diced potatoes evenly on the bottom. Add the cooked ground beef and onion mixture on top. Sprinkle the frozen mixed vegetables over the beef layer.
  4. Add the Creamy Sauce
    Pour the cream of mushroom soup evenly over the entire dish. Use a spatula to gently spread it so it covers all layers.
  5. Bake the Casserole
    Cover the dish with aluminum foil and bake for 40-45 minutes, or until the potatoes are tender.
  6. Add Cheese and Finish Baking
    Remove the foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  7. Serve
    Let the casserole rest for 5 minutes before serving. Enjoy a hearty, comforting meal!

Tip: You can swap the mixed vegetables for fresh ones or add a bit of Worcestershire sauce to the beef for extra flavor.
