Creamy Crockpot Chicken Spaghetti

An easy, cheesy, family-friendly dinner made right in the slow cooker. Tender chicken, rich creamy sauce, and perfectly coated spaghetti make this a comforting weeknight favorite with almost no effort.

 Ingredients

  • 2–3 boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 8 oz spaghetti, broken in half
  • 3 cups chicken broth

 Instructions

 Add to the Crockpot

Place the chicken breasts in the bottom of the slow cooker. Pour in the cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, garlic powder, onion powder, salt, and pepper. Do not stir.

 Cook the Chicken

Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and tender.

 Shred the Chicken

Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the slow cooker and stir everything together until well combined.

 Add the Spaghetti

Pour in the chicken broth and add the broken spaghetti. Gently press the spaghetti down into the liquid so it is mostly covered.

 Cook the Pasta

Cover and cook on high for 30–40 minutes, stirring once or twice to prevent sticking, until the spaghetti is tender.

 Add the Cheese

Stir in the shredded cheddar cheese until melted and creamy. Let it sit for 5 minutes to thicken.

 Serving Tips

  • Garnish with chopped parsley for color.
  • Serve with garlic bread or a simple green salad.
  • Add a pinch of red pepper flakes for a little heat if you like spice.

 Storage & Reheating

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat with a splash of milk or broth to bring back the creaminess.
