Tomato & Avocado Grilled Cheese Sandwich

 Ingredients

  • 1 ripe avocado, mashed
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • 4 slices of bread
  • 4 slices Colby Jack cheese
  • 1 Roma tomato, sliced
  • 1 tablespoon butter

 Instructions

1. Prepare the Avocado Spread

In a small bowl, mash the avocado until smooth. Add the lemon juice and salt, then mix well until creamy.

2. Assemble the Sandwich

Spread the mashed avocado evenly on two slices of bread.
Layer each with slices of Colby Jack cheese and fresh tomato slices.
Top with the remaining bread slices to form two sandwiches.

3. Cook the Sandwich

Heat a skillet over medium heat.
Spread butter on the outside of each sandwich.
Place the sandwiches in the skillet and cook for about 3–4 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted.

4. Serve

Remove from the skillet, let cool slightly, then slice in half. Serve warm and enjoy!

 Tips for Best Results

  • Use sourdough or whole grain bread for extra flavor and crunch.
  • Add a pinch of black pepper or chili flakes for a little kick.
  • For extra creaminess, add a thin layer of mayonnaise inside the sandwich.
