Char Siu Chicken Recipe

Ingredients:

  • 300 grams chicken thighs (fatty ones preferred for juiciness)

Marinade:

  • 1 tbsp honey
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce

Instructions:

  1. Prepare the chicken:
    • Trim excess skin if needed, but keep some fat for flavor.
    • Pat the chicken dry with a paper towel.
  2. Make the marinade:
    • In a bowl, mix honey, light soy sauce, and oyster sauce until smooth.
  3. Marinate:
    • Coat the chicken thighs evenly with the marinade.
    • Cover and refrigerate for at least 1 hour, ideally 3–4 hours or overnight for maximum flavor.
  4. Cook the chicken:
    • Preheat the oven to 200°C (400°F).
    • Line a baking tray with foil and place a rack on top.
    • Arrange the chicken thighs on the rack.
    • Bake for 20–25 minutes, then brush with extra marinade.
    • Flip the chicken, brush again, and bake for another 15–20 minutes until caramelized and fully cooked (internal temperature should reach 75°C / 165°F).
  5. Optional finishing:
    • For extra char, place under a broiler for 2–3 minutes per side, keeping a close eye so it doesn’t burn.
  6. Serve:
    • Slice the chicken and serve with steamed rice, stir-fried vegetables, or in a bao bun for an authentic Asian twist.
