Char Siu Chicken Recipe
Ingredients:
- 300 grams chicken thighs (fatty ones preferred for juiciness)
Marinade:
- 1 tbsp honey
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
Instructions:
- Prepare the chicken:
- Trim excess skin if needed, but keep some fat for flavor.
- Pat the chicken dry with a paper towel.
- Make the marinade:
- In a bowl, mix honey, light soy sauce, and oyster sauce until smooth.
- Marinate:
- Coat the chicken thighs evenly with the marinade.
- Cover and refrigerate for at least 1 hour, ideally 3–4 hours or overnight for maximum flavor.
- Cook the chicken:
- Preheat the oven to 200°C (400°F).
- Line a baking tray with foil and place a rack on top.
- Arrange the chicken thighs on the rack.
- Bake for 20–25 minutes, then brush with extra marinade.
- Flip the chicken, brush again, and bake for another 15–20 minutes until caramelized and fully cooked (internal temperature should reach 75°C / 165°F).
- Optional finishing:
- For extra char, place under a broiler for 2–3 minutes per side, keeping a close eye so it doesn’t burn.
- Serve:
- Slice the chicken and serve with steamed rice, stir-fried vegetables, or in a bao bun for an authentic Asian twist.
