HAWAIIAN STYLE TERIYAKI CHICKEN
Ingredients:
- 3 pounds chicken thighs (boneless or bone-in)
- 1 cup soy sauce
- 1 cup pineapple juice (or pineapple chunks with juice)
- 1 cup packed brown sugar
- 5 cloves garlic, mashed
- 1 tablespoon fresh ginger, minced
Instructions:
- Make the marinade:
In a large bowl, mix soy sauce, pineapple juice, brown sugar, garlic, and ginger until the sugar dissolves. - Marinate the chicken:
Add the chicken thighs to the mixture. Cover and refrigerate for at least 2 hours (overnight is best for more flavor). - Cook the chicken:
- Grill method: Grill over medium heat for about 6–7 minutes per side until fully cooked and nicely caramelized.
- Pan method: Cook in a large skillet over medium heat, turning occasionally, until the chicken is cooked through and sauce thickens.
- Oven method: Bake at 375°F (190°C) for 35–45 minutes, basting with sauce halfway through.
- Thicken the sauce (optional):
Remove the chicken and simmer the leftover marinade in a pan until it thickens into a glaze. (Make sure to boil it well before using!) - Serve:
Serve hot with rice, grilled pineapple, or steamed veggies.
Tips:
- Sprinkle with sesame seeds or green onions for extra flavor
- Add a little chili flakes if you like it spicy
- Best served with white rice to soak up that sweet-savory sauce
