Creamed Chipped Beef on Toast

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 jar (or 4–5 oz) dried chipped beef, sliced
  • 1/4 teaspoon black pepper
  • Pinch of salt (optional, since beef is salty)
  • 4–6 slices bread, toasted

Instructions

  1. Prepare the beef
    If the chipped beef is very salty, rinse it lightly under water and pat dry. Slice into bite-sized pieces if needed.
  2. Make the roux
    In a medium skillet over medium heat, melt the butter. Stir in the flour and cook for about 1–2 minutes, stirring constantly, until smooth and slightly golden.
  3. Add the milk
    Gradually whisk in the milk, stirring constantly to avoid lumps. Continue cooking until the sauce thickens, about 3–5 minutes.
  4. Add the beef
    Stir in the chipped beef and black pepper. Let it simmer gently for another 2–3 minutes until heated through and creamy.
  5. Taste and adjust
    Add salt only if needed. The beef is usually salty enough on its own.
  6. Serve
    Spoon the creamy chipped beef over warm toasted bread.

  • Add a pinch of paprika for extra flavor.
  • Serve with a side of eggs for a hearty breakfast.
  • You can substitute dried beef with leftover cooked beef or even turkey.
