Slow Cooker Cheesy Chicken Gratin
Ingredients
- 3 cups cooked chicken breast, shredded
- 2 cups shredded cheddar cheese
- 1 cup mozzarella cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sour cream
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 3 medium potatoes, thinly sliced
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
Instructions
- Lightly grease the slow cooker with butter.
- Place a layer of sliced potatoes at the bottom. Add a portion of shredded chicken on top.
- Sprinkle some onion, garlic, salt, pepper, paprika, and thyme over the layer.
- Add a mix of cheddar and mozzarella cheese.
- Repeat the layers (potatoes, chicken, seasoning, cheese) until all ingredients are used.
- In a bowl, mix heavy cream, chicken broth, and sour cream. Pour this mixture evenly over everything.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender.
- In the last 20 minutes, add extra cheese on top and let it melt.
- Let it rest for a few minutes before serving.
Tips
- You can add broccoli or spinach for extra flavor.
- Use rotisserie chicken to save time.
- For a crispy top, transfer to an oven dish and broil for a few minutes.
