Garlic Chicken with Broccoli and Spinach
Ingredients:
- 2 cups chicken breast, cubed
- 1 cup broccoli florets
- 1 cup fresh spinach leaves
- 1/4 cup olive oil
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tablespoon garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 1/2 teaspoon Italian seasoning (optional)
Instructions:
- Prepare the chicken
Season the cubed chicken with salt, black pepper, and paprika. - Cook the chicken
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–7 minutes until golden and fully cooked. Remove and set aside. - Sauté the garlic
In the same pan, add minced garlic and cook for about 30 seconds until fragrant (be careful not to burn it). - Cook the vegetables
Add broccoli florets and cook for 3–4 minutes. Pour in the chicken broth and let it simmer until the broccoli becomes tender. - Add spinach
Stir in the spinach and cook until wilted, about 1–2 minutes. - Combine everything
Return the cooked chicken to the pan. Mix well and let everything cook together for another 2–3 minutes. - Finish with cheese
Sprinkle grated Parmesan cheese on top and stir until melted and creamy.
Serving Suggestion:
Serve hot on its own, or over rice, pasta, or mashed potatoes for a complete meal.
