Crockpot Garlic Butter Beef Bites & Potatoes

Description:
Tender beef bites and baby potatoes slow-cooked in a rich garlic butter sauce. An easy, comforting meal that practically cooks itself!

Ingredients:

  • 2 lbs (900 g) beef stew meat, cut into bite-size cubes
  • 1½ lbs (700 g) baby potatoes, halved if large
  • 4 tablespoons unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • ½ cup beef broth
  • 1 tablespoon olive oil

Optional Garnish:

  • Fresh parsley, chopped

Instructions:

  1. Prepare the Crockpot
    Lightly grease the inside of your crockpot with olive oil or cooking spray.
  2. Add Beef & Potatoes
    Place the cubed beef and baby potatoes into the crockpot.
  3. Make the Garlic Butter Sauce
    In a small bowl, mix melted butter, minced garlic, beef broth, onion powder, garlic powder, thyme, parsley, paprika, salt, and pepper.
  4. Combine
    Pour the garlic butter mixture evenly over the beef and potatoes. Gently stir to coat everything well.
  5. Cook
    • Cover and cook on LOW for 6–8 hours, or
    • Cook on HIGH for 3–4 hours,
      until the beef is tender and the potatoes are fork-tender.
  6. Finish & Serve
    Taste and adjust seasoning if needed.
    Garnish with fresh parsley before serving.

Tips:

  • For extra flavor, sear the beef cubes in a hot skillet for 2–3 minutes before adding them to the crockpot.
  • Add carrots or green beans in the last 2 hours for a complete one-pot meal.
  • Serve with crusty bread or a fresh green salad.
