Description:
Soft, chewy, and perfectly seasoned mini bagels topped with classic everything bagel seasoning — perfect for breakfast, snacks, or sandwiches.
Ingredients:
For the Dough:
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 ½ tablespoons sugar
- 1 ¼ cups warm water (110°F / 43°C)
- 3 ½ cups all-purpose flour
- 1 teaspoon salt
For Boiling:
- 2 quarts water
- 1 tablespoon sugar
For Topping:
- 1 egg, beaten (for egg wash)
- Everything bagel seasoning (store-bought or homemade, see below)
Homemade Everything Bagel Seasoning (optional):
- 2 tablespoons sesame seeds
- 2 tablespoons poppy seeds
- 1 tablespoon dried minced garlic
- 1 tablespoon dried minced onion
- 1 teaspoon coarse salt
Instructions:
1. Prepare the Dough
- In a small bowl, dissolve yeast and sugar in warm water. Let sit 5–10 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Add yeast mixture and knead for 8–10 minutes until smooth and elastic. (You can use a stand mixer with a dough hook.)
- Place dough in a lightly oiled bowl, cover, and let rise 1 hour or until doubled in size.
2. Shape the Bagels
- Punch down the dough and divide it into 12 equal pieces for mini bagels.
- Roll each piece into a ball, then poke a hole through the center and gently stretch to form a bagel shape.
- Place on a parchment-lined baking sheet and cover with a kitchen towel. Let rest for 10–15 minutes.
3. Boil the Bagels
- Preheat oven to 425°F (220°C).
- In a large pot, bring 2 quarts of water and 1 tablespoon sugar to a boil.
- Reduce heat to a simmer. Boil bagels 1–2 minutes per side, then remove with a slotted spoon and place back on the baking sheet.
4. Add Topping
- Brush each bagel with beaten egg.
- Sprinkle generously with everything bagel seasoning.
5. Bake
- Bake in preheated oven for 20–25 minutes, until golden brown.
- Remove from oven and cool on a wire rack for 10 minutes before serving.
Tips:
- For extra chewiness, let the bagels sit in the fridge overnight after shaping and before boiling.
- Everything bagel seasoning can be adjusted to taste—more garlic or sesame if you like.
