Mini Everything Bagels

Description:
Soft, chewy, and perfectly seasoned mini bagels topped with classic everything bagel seasoning — perfect for breakfast, snacks, or sandwiches.

Ingredients:

For the Dough:

  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 ½ tablespoons sugar
  • 1 ¼ cups warm water (110°F / 43°C)
  • 3 ½ cups all-purpose flour
  • 1 teaspoon salt

For Boiling:

  • 2 quarts water
  • 1 tablespoon sugar

For Topping:

  • 1 egg, beaten (for egg wash)
  • Everything bagel seasoning (store-bought or homemade, see below)

Homemade Everything Bagel Seasoning (optional):

  • 2 tablespoons sesame seeds
  • 2 tablespoons poppy seeds
  • 1 tablespoon dried minced garlic
  • 1 tablespoon dried minced onion
  • 1 teaspoon coarse salt

Instructions:

1. Prepare the Dough

  1. In a small bowl, dissolve yeast and sugar in warm water. Let sit 5–10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add yeast mixture and knead for 8–10 minutes until smooth and elastic. (You can use a stand mixer with a dough hook.)
  3. Place dough in a lightly oiled bowl, cover, and let rise 1 hour or until doubled in size.

2. Shape the Bagels

  1. Punch down the dough and divide it into 12 equal pieces for mini bagels.
  2. Roll each piece into a ball, then poke a hole through the center and gently stretch to form a bagel shape.
  3. Place on a parchment-lined baking sheet and cover with a kitchen towel. Let rest for 10–15 minutes.

3. Boil the Bagels

  1. Preheat oven to 425°F (220°C).
  2. In a large pot, bring 2 quarts of water and 1 tablespoon sugar to a boil.
  3. Reduce heat to a simmer. Boil bagels 1–2 minutes per side, then remove with a slotted spoon and place back on the baking sheet.

4. Add Topping

  1. Brush each bagel with beaten egg.
  2. Sprinkle generously with everything bagel seasoning.

5. Bake

  1. Bake in preheated oven for 20–25 minutes, until golden brown.
  2. Remove from oven and cool on a wire rack for 10 minutes before serving.

Tips:

  • For extra chewiness, let the bagels sit in the fridge overnight after shaping and before boiling.
  • Everything bagel seasoning can be adjusted to taste—more garlic or sesame if you like.
