Amish Snow Day Soup
A cozy, creamy comfort soup straight from Amish kitchens—perfect for cold days, simple ingredients, big warmth
Ingredients
- 4 slices bacon, chopped
- 1 tablespoon butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, peeled and diced
- 2 cups carrots, sliced
- 1 cup celery, sliced
- 3 cups chicken broth (or vegetable broth)
- 1½ cups milk (whole milk is best)
- 1 cup heavy cream
- 1½ cups shredded cheddar cheese
- 2 tablespoons all-purpose flour
- Salt and black pepper, to taste
- ½ teaspoon dried thyme (optional)
- Fresh parsley or chives, for garnish (optional)
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
- Add butter to the pot, then sauté the onion until soft and translucent (about 3–4 minutes). Add garlic and cook for 30 seconds.
- Stir in potatoes, carrots, and celery. Pour in the chicken broth and bring to a gentle boil.
- Reduce heat, cover, and simmer for 15–20 minutes, or until vegetables are tender.
- In a small bowl, whisk flour with a little milk to make a smooth slurry. Stir it into the soup.
- Add remaining milk and heavy cream. Simmer gently until the soup thickens.
- Stir in shredded cheddar cheese until melted and creamy.
- Season with salt, pepper, and thyme. Add the cooked bacon back in.
- Serve hot, garnished with parsley or chives if you like.
Tips
- For extra thickness, mash a few potatoes directly in the pot.
- You can add corn or shredded chicken for a heartier version.
